Tom Collins, assistant professor at Washington State University, recently published a study that explains how the cooper can bring variability during traditional barrel toasting.


This research highlights how important the toast is in the quest for barrels consistency and reproducibility. Vicard has eliminated this factor of variability since 2009 thanks to its computer-controlled molecular cooking system, unique in the world of cooperage.
